Vegan Empanada recipe and so we, of course, needed to give it a shot. It was delicious! We made the dough using 100% Whole Wheat flour, but plan on giving Chickpea flour a shot next time we make it (
and we will definitely be making it again!). The entire process is a little time intensive so we will be making a double batch all at once and freezing the left overs for an easy meal on a busy day. Can't wait to have them again!
